Green Pea Guacamole (Whole Foods Market)

(Very yummy and easy to make.  Serve with raw veggies.  If you don’t like coriander, then substitute flat leaf parsley, basil, or mint.) 

1/3 cup roughly chopped cilantro

1 (16-ounce) bag frozen green peas, thawed

1 avocado – peeled, pitted, and roughly chopped

4 green onions, sliced

3 cloves garlic, minced

4-6 tablespoons lime juice

Puree everything together in the food processor until it reaches the consistency you like.  I add 3-4 tablespoons of low-fat, plain yogurt to thin my guacamole out a little bit, but it is still nice and chunky.  Skip the yogurt if you are avoiding dairy.
